I love searching for recipes on Pinterest! The key is to actually try to make some of them and not just let them sit untouched on your lonely recipe board. I was making roasted chicken and baked sweet potatoes the other night and searching on Pinterest for some fun recipe twists. I had a random assortment of food in my kitchen and wanted to use as much of it as possible. I ended up finding a recipe for baked sweet potatoes topped with green onions and avocado. Score! This slightly odd sounding combo turned out so delicious!

But once I start browsing Pinterest I have a hard time stopping, so I kept clicking and pining around and discovered a healthy chicken salad recipe that bookmarked for lunch. This was the perfect way to use my leftovers from dinner including chicken, green onions and avocado. Everything else I just happened to have on hand.

The original poster LemonSugar is so right when she says you can use anything you have and come up with your own combo. Mine was a twist on her’s and still turned out so delicious! Sometimes recipes on Pinterest can be so complicated and require random ingredients, but this is something anyone could make at least once a week!

Find the original recipe here and feel free to get creative when you make it yourself. The key is to use whatever you happen to have and not make an extra trip to the store.
