Ice Cream Sandwiches aren’t just for Summer, they are delicious all year. Especially when your name is Lucy and it’s maple bacon ice cream on pumpkin cookies! In my latest video, learn how to make DIY Ice Cream Sandwiches for dogs this Fall.
The recipes features super-easy Maple Bacon Ice Cream and homemade Pumpkin Treats. I’ve made dog ice cream before, and it’s pretty easy, but this mix from Puppy Cake takes all the guesswork out and comes in a few fun flavors. I was so excited when they sent me some to sample. Rather than just giving Lucy a scoop (which I’m sure she’d have been fine with!), I decided to have a little fun with it and make sandwiches (again, no complaints for her on that call!). Before you even hit play on the video you can see how Lucy was trying to snatch that ice cream sandwich up!
One of the best things about this recipe is that it’s so versatile. The ice cream will keep in the freezer for months so you can have just a little bit at a time. I ended up with about two dozen treats (using a small jar to cut out circle shaped treats), I used a few to make sandwiches while we made the video, and kept the extras on hand as more innocent treats throughout the day. In a sealed container they will last for a week or more, if your dog doesn’t eat them before then!

Pumpkin Cookie Ingredients:
• 2 large eggs
• 2 1/2 cups Whole Wheat Flour
• 2 Tablespoons Dry Milk
• 1/2 Cup Canned Pumpkin
• Water, as needed
Preheat oven to 350 degrees. Mix ingredients, and roll out dough to 1/4 inch thickness. Cut out with desired shape and bake for about 40 minutes.
Make sandwiches using Maple Bacon Ice Cream Mix from Puppy Cake. I used a heaping tablespoon of ice cream between 2 treats for each sandwich.
Note: Allow enough time for the ice cream to harden before you plan on making the sandwiches. It needs at least 5 hours in the freezer, so you might want to make it a day in advance.
